16 Week Program:
Baking and Cake Decorating
Wedding cake, fondant, gum paste flowers, buttercream techniques, royal icing techniques, children birthday cakes, Dominican cake, vanilla cake, chocolate cake, filling, icing, piping and spatula techniques.
36 hour workshop
In this three hour class the students will learn all the technical aspects of cake decorating techniques. Such as the correct use of the pastry bag, and different tips to create star borders, shell borders, rosette borders, zigzags borders, inverse borders and braided borders.
In this three hour class, you’ll learn how to use of the spatula to apply icing on your cakes. Also how get your cakes even and smooth using different tools. You’ll also learn the correct use of the pastry bag to created different designs.
Basic Cupcake Decoration:
Introduction to basic cupcake decoration. Students will learn how to decorate the cupcakes with fondant and gumpaste. They will also learn how to make a rosette design on top of the cupcake using a pastry tip and pastry bag. Students will take their beautiful cupcakes back home with them.
Chocolate Cakes, vanilla cake, cupcakes, Vanilla and chocolate Buttercream Icing. Leveling, Filling, Crumb Coat:
In this three hour demonstration, You’ll learn all the technical aspects of baking, right ingredients temperature, measuring dry and liquid ingredients. Students will also learn how to elaborate a very moist vanilla cake, cupcakes, blackout chocolate cake, cupcakes and delicious vanilla buttercream icing, chocolate and mocha filling. The students will also learn all about, using the right tools and techniques for leveling using serrated knife, cake levelers, filling and crumb coat.
Dominican Cake, Filling and Icing:
Learn all the secrets on how to make a delicious Dominican cake. In this two day, three hour workshop, the student will learn how to make two different versions of this famous cake. Also how to make a pineapple upside-down, orange cupcakes, mocha cake, amaretto cake, Piña Colada cake. Pineapple, strawberry, and Dulce de Leche filling. And all the secret to elaborate the meringue icing.
In this three hour workshop, you’ll learn all the technical secret to roll out fondant and cover an 8” x 8” square cake using this sugar paste. The students will also learn, how to use gum paste and fondant to create different designs. The cake will be provided for the student.
Gum Paste Flowers I: Rose, Rose bud, Calla Lily, Foliage and Painting
In this three hour workshop, the students will learn how to create a very quick and simple gum paste mixture to create rose, rose bud, calla lily and foliage. You’ll also learn how to add color to the paste and how to roll out, cutting and shaping technique. In this workshop, the students will also learn how to use color dust to paint all the flowers.
Gum Paste Flowers II: Peony, Bud, Foliage and Painting
In this three hour workshop, the students will learn how to create a very quick and simple gum paste mixture to create Peony, bud and foliage.You’ll also learn how to add color to the paste and how to roll out, cutting and shaping technique. In this workshop, the students will also learn how to use color dust to paint all the flowers.
Tier Cakes Workshop:
In this three hour workshop, students will learn how to build beautiful cakes for Weddings, Sweet Sixteen's or Anniversaries. You’ll learn the correct way to create tiers, using dowels and columns for classic and modern designs. In this three hour class we’ll create different types of designs using royal icing, gum paste and fondant. Also, how to create different flowers arrangements to decorate your cakes.
Buttercream Flowers, Coloring and Cake Composition Workshop:
In this three hour workshop, students will be working with a 6” cake and learn flower arrangements, compositions and color combinations. We’ll also learn a different types of flowers such wisterias, branches, sweet pea, cherry blossoms, ivy leaf. The students will also learn how to elaborate the butter cream icing to create all this beautiful flowers. Special buttercream recipe will be provided.
Royal Icing Flowers Techniques:
In this three hour workshop, students will learn how to elaborate royal icing. A great selections of flowers will be created. Such as lilies, petunias, poppies, morning glory, hibiscus and blossoms.
Children birthday cakes:
In this three hour workshop, students will learn different techniques to created children birthday cakes, using fondant, gum paste, modeling paste and royal icing. Each student will work on an individual project.
Baking I: Hummingbird Cake, Carrot Cake, and Red Velvet Cake
In this three hours class students will learn how to create a delicious hummingbird cake, carrot cake, red velvet cake, cream cheese frosting.
Baking II: Tres Leches Cake, Tiramisu Cake and Chiffon Cake
In this class you will learn how to prepare different type of cakes, icings and fillings: Tres leches Cake, tiramisu cake, tangerine chiffon cake and Chantilly Icing.
$2,000 divided into five payments of $400
Students need to deposit $400 to enroll; second payment is due first day of class.
Everything necessary to participate in the class is provided for you to use. You do not need to purchase any tools or equipment prior to the class, or bring anything with you to class.
